Sushi originated from a Southeast Asian dish, known today as Narezushi – "salted fish", stored in fermented rice for possibly months at a time. The lacto-fermentation of the rice prevented the fish from spoiling; the rice would be discarded before consumption of the fish.
This early type of sushi became an important source of protein for its Japanese consumers. The term sushi comes from an antiquated grammatical form no longer used in other contexts, and literally means "sour-tasting"; the overall dish has a sour and umami or savoury taste. Narezushi still exists as a regional specialty.

The food was really amazing but the service was terrible. For such a high end establishment you would expect better service. We waited at least 10 min for someone to notice we had no menu’s, ordered drinks which came out piecemeal - had to ask 3 times for our sparking water. Asked for coffee was told soeey the barman makes that too so u going to wait a long time maybe just a bad night for them!... See MoreSee Less
We have been for lunch and dinner and both times we were super impressed by the greeting and service right from the front entrance all the way through our most delicious meals. We eat in many many restaurants and Haiku is definitely one of our favourites.... See MoreSee Less
The standard of cuisine is kept at a high standard and dining is memorable especially upon a first visit. For a regular diner since the opening of the establishment the decor is tired and old and the entrance unimpressive. The food is still good but portions very sparse for the high price. It has lost its elegance and charm and subsided into the status of being just another Restuarant.... See MoreSee Less
